Commercial Cookery

At Central Regional TAFE, commercial cookery courses are industry-focused programs taught by experienced chefs. You’ll learn practical skills and knowledge to plan, organise, prepare, and cook food in commercial kitchen environments. You’ll gain the skills and knowledge to cook food within different cuisines, as well as know how to produce dishes suitable for cultural and dietary requirements.

You’ll also learn about effective communication, workplace hygiene, food safety and cleaning programs, and first aid, to help supplement your cooking skills. Our commercial cooking courses are constructed to ensure that each graduate comes out of the program job-ready, with the right skills to excel in the industry no matter where they choose to go.

TAFE commercial cookery programs are offered as an apprenticeship or in classroom-based delivery. If you’re planning to undergo an apprenticeship program, you’ll need to be employed in a training contract with an appropriate organisation. You’ll be learning on the job, and experiencing all aspects of cookery while gaining valuable experience towards a rewarding career path.
