Learn the secret of decorating a variety of different cakes including mud, butter, sponge, chocolate and fruit cake. Students will learn how to cover the cakes with different icings like imitation sweet cream, buttercream, ganache, chocolate shards, chocolate prints and fondant. Learn the best tips and tricks from an experienced and licensed cake maker in the state of the art commercial kitchen of the Kalgoorlie campus. Take home your cake each week to share with family and friends.

This skill set covers all the 'must know' skills that employers are looking for, so you'll be skills ready and job ready! It covers how to follow organisational infection prevention and control procedures, including implementing standard and transmission-based precautions and responding to infection risks to ensure you're working safely.

In the Commercial Kitchen skill set, you'll learn about the safe use of commercial kitchen equipment, how to  clean food preparation areas, storage areas, and equipment efficiently and minimising negative environmental impacts, preventing food contamination including how to identify and control food hazards, and gain general kitchen and food preparation skills.

Bake Macarons, Entremets & Pastries

Petits fours are bite sized treats that are perfect for high tea, tastings, buffets, dessert platters, catering and cake shops. From classic to contemporary, immerse yourself in one of our patisserie short courses that will teach you how to create perfectly shaped moulded pastries ready for your own high tea. The recipes provided in this class are designed so the students can use them after class as either petit fours sized cakes or larger cakes. Students will also learn about food safety and hygiene.
